Black Angus Short Ribs are to die for, and unfortunately, we do not stock these wonderful ribs year round as they tend to be an item seen on menus in fall and winter - though for us winter last for 6 months - Uhg!
Short Ribs are cut from the plate (which if described is like the St. Louis Rib of the Beef). Our producer removes the top layer of fat and grisle and leaves us with a thin amount of palatable fat, which helps keep the meat moist during the long braising time required for short ribs - it also adds flavor. Each rib portion consists of 4 ribs and is 1 1/2" thick and 8" x 10". The ribs can be cut into individual ribs easily or cooked as a whole slab. We vacuum seal 2 slabs per package - this will make enough for 6-8 people or 4 people with left-overs.
My favorite thing to do with these ribs is to braise them in Guiness Beer - there are a ton of recipes on the internet for this application.
