Camel Strips are super tasty and super tender. I recently sold about 30 pounds of these to a local restaurant and they served them at a ladies luncheon. You read that right - a ladies luncheon, and they went crazy over these things. They loved it so much that they have booked another party at this restaurant and want camel again.
The one item I do not like about Camel is the outside of the muscles have this weird tendon that needs to be trimmed off. It is completely inedible and adds nothing to the cooking/grilling process. That aside, the NY Strip makes nice steaks, so nice in fact, that I cut all of the remaining whole Strips we had in house into 2" thick monster Strip Steaks.
Camel NY Strip loins are smaller than what you would think - they average between 5.15-5.30 Pounds each, where as a beef NY Strip will be 2-3 times that size. I would estimate a loss of about 1/2 oz from the tendon that needs to be removed, though I did hear of a chef in Rochester, MN taking the tendon and slicing it super thin and then deep frying it and calling it a chip - I guess it worked - he orders a Beef tendon from us in 40# cases.
Camel is a herd Management item, sort of like the way we control White Tail Deer here in the states. Camel are extremely destructive and they are car destroyers, sorta like a moose is here in Wisconsin/Minnesota.
