Occasionally I stumble on some out of the ordinary cuts or products and feel the need to acquire them for my clients. This cut is no exception - normally we never see individually packaged eye of rounds, as they are the prized cut of a Denver Leg. Chefs all over, love the Denver Leg for its diversity and uses on their menu. A Denver Leg is a phrase coined by Elk/Venison producers as meaning a Venison/Elk Leg without bones or silver-skin sectioned off into the 5 major muscles (Top, Bottom, Sirloin, Sirloin Tip, Eye). 99% of the time these muscles are packaged back together as one leg and sold as is. I guess the processor that did this work did not get the memo and I was lucky enough to acquire these Eye of Rounds.
The Eye of Round is perfect for cutting into thicker steaks, medallions, roasted whole like roast beef, or corned. What you will find is that the muscles of the Denver Leg will be as tender if not more tender than a tenderloin and I can guarantee they will be tastier. Even better - they are 1/2 the price of a tenderloin - thus the reason all great chefs keep this a secret.
These elk came from a small producer in Northern Iowa and this is a product that once they are gone, there will be no more, as this producer retired.
These cuts came from only Prime animals that are 100% Grass Fed, 100% All Natural, No Antibiotics or hormones ever. All animals are tested for CWD at time of processing.
