This is a very interesting sausage/snack stick/jerky. I think you might be able to see that this is a harder job that usual to describe this product. This snack item was originally made in Germany and then adopted by the Swiss or vice versa. The snack is thick in nature like a kippered jerky, but not dried as much as jerky, though you can dry it as much as jerky. It is coarse ground meat, packed into a natural casing and then the snack is pressed so that is has a sort of rectangular shape to it, then it is smoked and then dried. Some cheese houses in Wisconsin actually store landjaeger in the open and let it dry for extensive amounts of time.
The Landjaeger that we have is vacuum packaged and we keep it in the refrigerator, but it is a shelf stable product. I love to take it camping or hiking - though I have found the bears like my landjaeger as much as i do.
Ingredients: Elk, beef, salt, spices, dextrose, corn syrup solids, soy flour, monosodium glutamate, natural smoke flavor, lactic acid starter culture, flavoring, sodium nitrite, hydrolyzed soy protein, natural casing.
