Ellsworth, WI - Cheddar Cheese Curds - 1# Bag - Frozen
Every Wednesday, Ellsworth Wisconsin's Cheese Cooperative makes fresh cheese curds. By Law they are required to cool prior to boxing and shipping. We pick them up every Thursday morning in 25# bulk boxes, bring them back to our facility (I snitch a few curds to test their validity and squeakiness), prior to packaging them for our store, website and wholesale clients. We are 1 of 2 locations in the Midwest that sell fresh curds - everyone else sells the vacuum sealed ones - yuck!.
Fresh curds are awesome. Explained a bit more, they are a white cheddar curd and the true test of a fresh curd is that is squeaks when you chew them. These are very tasty all by themselves or added to a cheese plate. I love to stuff them into burgers or if you love deep fried cheese curds - you can have fun making these as well. Cheese curds freeze very well and if frozen within 1 week of production, they will retain their squeakiness, otherwise a 15 second jolt in the nukerwaver will bring them back to their original squeakiness.
These curds are frozen 1 week after production - so they are the ones that did not sell in our store the prior week. If you want to make a Juicy Lucy - I recommend using FROZEN curds as they are just starting to melt when you remove the burger from the grill. Frozen curds work best for making deep fried curds as well.
These curds are ranked as the BEST in the WORLD - but maybe you should be the judge of that.
I did not make a mistake on the price - Yes they are $2.00/1 Pound Bag. I have a crap ton of these and wish for them to go to a good caring and hungry home. Please limit yourself to 1 package per order - OK - maybe 2 packages.
