So you are probably wondering what in God's name in a Denver Leg. Well - Denver Leg is a label that was coined by the deer industry in the 90's to identify a leg of a game animal that has had all of the silver skin removed, bones removed and the major muscles sectioned out of the leg (Top, bottom, sirloin, sirloin tip and sometimes the eye).
A ton of people are not of the understanding of how tender a leg is especially in game meat. We surely know what domestic (Beef or Pork) leg meat is like - tough and requires a good amount of cook time.
