Moulard Ducks are the second largest of the Domestic Raised Duck Breeds, with Muscovy being the largest. These ducks are used in the production of Foie Gras - Foie Gras is a French delicacy that comes from over feeding the ducks with a high corn diet, which caused the liver to enlarge. Duck Legs are one of the main ingredients in Cassoulet or Confit, and of course if you are going to confit your duck legs - for sure you should use them in cassoulet. Confit is the art of slowly cooking your game birds legs in rendered duck fat and then cooling and aging the cooked game bird meat submerged in the duck fat to where air cannot come in contact with the meat.
