Rabbit & Rattlesnake Sausage with Green Jalapenos
I will bet you have never thought of this combination before. It is down right delicious, but I must admit it conjures up some interesting images and conversations. This sausage is not smoked, but we added pork to it anyway, as we make it for State Fairs and our old recipe was a huge failure when we did not add any fat to it - can you say shoe leather. We have learned from our mistakes and have since added enough pork to allow over paid teenagers the ability to grill these critters to a golden brown and allow the customer a chance to enjoy the true flavor of the brat on a bright sunny day at the fair.
This sausage should be poached in boiling water for 5-6 minutes prior to grilling or alternate cooking situations. This brat/sausage is great with our squeezable sauerkraut on it - no need for cans of that stuff anymore - check this product under other tasty goodies.
Very interesting and pleasing flavor profile, as rabbit and rattlesnake compliment each other.
Ingredients: rabbit, pork, water, non fat dry milk, rattlesnake, chardonnay wine, jalapeno, salt, spices, sugar, cilantro.
