It does in fact taste like chicken, as well as Rattlesnake. Not the flavorless type in grocery stores but the free range type that we enjoyed as kids.
Rabbit meat is light colored with a fine texture and very mild flavor. Rabbit is best pan fried or roasted. It is also delicious grilled as long as it is basted frequently and cooked only to medium.
Rabbit is frequently recommended for medical reasons because it is 98% fat free, low in cholesterol and high in protein.
5-6 pieces = 2 hind 1/4's, 2 front 1/4's, and a saddle that sometimes is split down the middle.
Expect to receive 1 Rabbit weighing about 2.25-2.75 pounds each and is cut into 5-6 pieces and vacuum sealed. This product is shipped frozen.

I had a friend who owned a restaurant in Wisconsin; he served a wonderful dish he called Cajun Rabbit. After much cajoling he shared the secret recipe with me and I've made it at home for years. The Specialty Meats & Gourmet cut-up rabbit pieces worked perfectly and are the best I have ever had. From now on SM&G will be my only supplier.
