This Venison and Berkshire Pork Salami is handcrafted and cured according to authentic gourmet European Salumi/Salami standards. Each of the fine salamis we offer are made using only fine natural meats that are blended with the flavour from the Mediterranean.
This Salami is produced using only pure bred USDA quality approved Berkshire pork from the US and all natural Venison from New Zealand.
Aged according to Old World standards, you will notice a white mold on the outside of the salami - this is natural. You can eat the salami with this still on or you can remove it by washing it off or we have used a vegetable peeler in the past. You will have to try it both ways as the flavor is completely different.
Ingredients: Venison, berkshire pork, sea salt, non fat dry milk, sugar in the raw, red wine, spices, dextrose, fresh garlic, black peppercorn, sodium erythorbate, lactic acis, live starter culture.
