Denver Leg is a description invented by Deer Farmers and processors. This cut is a chefs best kept secret - a cut of meat that is more flavorful than a tenderloin and more tender. Yield is usually 100% - no waste - as we have taken all of the silver-skin off the muscles and removed the bones.
Each Denver Leg consists of 4-5 muscles - mainly depending on the size of the animal. These Denver Legs will be a 4 muscle (Top, Bottom, Sirloin and Sirloin Tip) - larger animals will yield an Eye of Round from the Bottom Round. These muscle groups have had ALL silver skin removed and are ready for either roasting whole or cutting into steaks or medallions or if need be kabobs.
Why is it a chefs best kept secret? Because they are bringing in this product at half the price of a tenderloin and charging the same prices as a tenderloin on their menu. Cha-ching!!
All of our Farmed White Tail Venison comes from a farm located just outside Rogers, MN. All of the animals are free ranging and grass fed. The owner is a friend of mine and highly respected in the Deer and Elk community.
