A cured beef originating in Lombardy, Italy and is similar in appearance to prosciutto (pork).
Flavorwise, our Bresola has a deep and somewhat complex beefy flavor, accented with the simple spices used to cure this type of meat. This meat literally melts in your mouth.
Wagyu/Kobe Bresola is made from the NY Strip-loin and the marbling on these loins is magnificent. Bresaola is aged 2-3 months until it becomes very hard and a dark red color, at which time it is sliced super thin and vacuum packaged into 4 oz packages.
It is traditionally served sliced very thin and dressed with olive oil, lemon juice and freshly ground black pepper.
